記得讀書時做過一個實驗...把生雞蛋放進液態nitrogen裡...出來和熟蛋沒有分別...除了溫度不同...

嘩...好詳細...
補充一下...peptide chain (是SAK兄所說的多肽鏈吧? 中文translation我不太懂) 的一部份和另一部份之間既bond...令到peptide chain自己折曡起來...所以會令本身是二次元排列的amino acid構成三次元立體的蛋白質...而蛋白質的性質與功能...就是取決於其立體形狀如何與其他物質interact的...而peptide bond被破壞...就令到蛋白質的立體形狀改變...從而影響蛋白質本身的形狀...性質與其功能...

呵呵....對對...是hydrogen bond...my mistake...

至於為何冷凍會令蛋變得好像熟蛋一樣凝固嘛...就是因為hydrogen bond本身是一種很弱的bond...如加酸、重金屬、劇烈震蕩、輻射等等任何endothermic or exothermic 既reaction都很容易就可以破壞到hydrogen bond的...
